For your first question, yes, you can substitute or omit the use of almond. Though I had not try it yet, I would imagine that hazelnut, or even pistachio will give a delicious result. As for the milk, I tried to use almond milk, and soy milk before, but it taste was tasteless. I mean, is not as fragrant as coconut milk.

To get the result as the one you see in my last photograph, you need to knead the dough longer then what you might normally do, and on slow speed. Having said that, this is depending on how strong your mixer is. Very often, when my mixer is getting too hot, I continue to knead it by hand for couple minutes more.
